Chef De Partie

Reporting to the Sous Chef, the Chef de Partie accountable for overall success of the daily kitchen operations. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions and following the 1440 Cuisine profile. Works to continually improve guest and employee satisfaction while maintaining the operating budget. Supervises all kitchen areas to ensure a consistent, high quality product is produced. Responsible for guiding and developing staff including direct reports. Must ensure sanitation and food standards are achieved.


  • Train cooks and cook staff in line with standards set by the Executive Chef
  • Manages kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
  • Estimates daily production needs on a weekly basis and communicates production needs to kitchen personnel daily.
  • Assists Sous Chef with all kitchen operations and preparation.
  • Prepares and cooks foods of all types, either on a regular basis or for special guests or functions.
  • Develops, designs, or creates new applications, ideas, relationships, systems, or products, including artistic contributions.
  • Assists in determining how food should be presented and creates decorative food displays.
  • Maintains purchasing, receiving and food storage standards.
  • Ensures compliance with food handling and sanitation standards.
  • Performs all duties of kitchen managers and employees as necessary.
  • Recognizes superior quality products, presentations and flavor.
  • Ensures compliance with all applicable laws and regulations.
  • Follows proper handling and right temperature of all food products.
  • Operates and maintains all department equipment and reports malfunctions.
  • Checks the quality of raw and cooked food products to ensure that standards are met.
  • Ensure daily oversight of protocols for high standards of safety and sanitation procedures
  • Work with the Chef de Cuisine, and Sous Chef to promote a high-performance culture in alignment with 1440's mission, vision and values
  • Supervises and coordinates activities of cooks and workers engaged in food preparation.
  • Accountable for following all recipes approved by Executive Chef, Executive Sous and Chef de Cuisine.
  • Accountable for following and enforcing all SOP's
  • Ability to work a minimum of 8-10 hour shifts when scheduled by the Executive Sous Chef.
  • Multitask and oversee personal and team prep, while being aware of the entire needs of the kitchen
  • Responsible for opening and closing the kitchen without supervision
  • Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
  • Check in orders safely and properly
  • Able to enforce FIFO
  • Ability to give and receive professional feedback
  • Communicate needs for present and future meals in a timely fashion
  • Able to manage menu changes daily, and learn current and future menus
  • Able to communicate daily feedback in a respectful, and encouraging tone
  • Manage and present progressive discipline with all team members in accordance to the standards set up by the 1440 culinary executive team.
  • Manage and direct the cooking staff
  • Achieves and exceeds goals including performance goals, budget goals, team goals, etc.
  • Develops specific goals and plans to prioritize, organize, and accomplish your work.

Essential Skills and Experience

  • High school diploma or GED; 4 year experience in the culinary, food and beverage, or related professional area.
  • Demonstrate high-level of knowledge in farm-to-table, natural foods and remaining current regarding food service and cuisine trends
  • Experience as a chef dedicated to farm-to-table cuisine and experience as a Sous Chef preferably in a large-scale kitchen environment
  • Flexibility to work varied scheduled hours based on the business needs
  • Proven track record of success creating a kitchen culture that is professional, respectful and compassionate
  • Proven track record of successful relationships with both management team and direct reports
  • Ability to foster strong relationships with local food purveyors and all suppliers

  • Must be able to work nights, weekends, and holidays as well as a varied schedule and attend to facilities emergencies that require cleaning

  • As a member of 1440 Food and Beverage team, the Chef de Partie is required to assist other departments in driving a positive campus culture and advancing 1440's Mission.

  • Monthly creative development goal must be presented to the Executive Chef. This ensures that 1440 Kitchen Table is pushing the boundaries on new bright ideas in the kitchen. Giving our guests new culinary offerings.
  • Will possess keys to Kitchen Table to lead open and closing procedures

  • This role requires a hands-on leader to oversee a successful team in an office/ campus environment and is not a remote role.
