Sous Chef

Position Summary

Reporting to the Executive Sous Chef, the Sous Chef assists in creating a delightful dining experience and food that is fresh, vibrant and nutritious. The Sous Chef is prepares excellent quality food items in line with the Cuisine Profile and leads the professional functioning of the main kitchen cooking staff. The Sous Chef is responsible for ensuring all menu items are produced in the high standards set by the Executive Chef and oversees kitchen operations, particularly safety and sanitation procedures. The Sous Chef works closely with the Executive Chef and other food service managers to ensure efficient operations of the food service department in line with 1440's Cuisine Profile and mission, vision, values. The Sous Chef will be assigned a specific shift that they will be responsible for setting up with their team. The Sous Chef models a passion for 1440's food services vision.

 Accountabilities

  • Advise Executive Chef, Executive Sous Chef and other members of the food service management team on daily contact per shift.
  • Work with assistant lead cook to prepare, execute and motivate your team every shift
  • With direction from the Executive Chef maintain a clear definition and execution of the Cuisine Profile and ensure standards are communicated to the cooking team
  • Ensure that food is produced within budgetary guidelines and constantly look for pre-and post-production waste and re-use opportunities.
  • Working with the Executive Chef and Executive Sous Chef, develop menus and recipes
  • Serve as a member of the food service management team.
  • Maintain good relationships and lines of communication within the department both with the cooks as well as the front house staff and stewards.
  • Train cooks and prep staff
  • Ensure that all food prepared meets the flavor, texture and presentation standards established by the Executive Chef and Cuisine Profile.
  • Manage, direct, and organize the work of the cooking and prep staffs ensuring efficient and effective execution of all tasks
  • Ensure daily oversight of protocols for high standards of safety and sanitation procedures
  • Work with the Executive Chef, and Executive Sous Chef to promote a high-performance culture in alignment with 1440's mission, vision and values
  • Oversee equipment maintenance in main and prep kitchens
  • Must be able to work nights, weekends, and holidays as well as a varied schedule and attend to facilities emergencies that require cleaning
  • Follow recipes as provided by the Executive Chef
  • Other duties and projects as assigned

 Essential Skills and Experience

  • Demonstrate high-level of knowledge in farm-to-table, natural foods and remaining current regarding food service and cuisine trends
  • Experience as a chef dedicated to farm-to-table cuisine and experience as sous chef preferably in a large scale kitchen environment.
  • Proven track record of success creating a kitchen culture that is professional, respectful and compassionate
  • Proven track record of successful relationships with both management team and direct reports
  • Ability to foster strong relationships with local food purveyors and all suppliers
